Chinese Barbecued Pork Fried Rice

Ingredients:
  • 3 cups cooked, cold rice (preferably precooked half to one day in advance)
  • 1/2 cup shelled and cleaned shrimps
  • 1/2 cup Chinese barbecued pork
  • 1/2 cup green peas
  • 2 eggs – lightly beaten
  • 3 stalks green onion (scallions) – chopped
  • 3 Tbsp cooking oil
Ingredients A:
  • 1/4 tsp salt
  • 1/4 tsp sugar
Ingredients B:
  • 2 cloves garlic
  • 3 thin slices ginger
Ingredients C (Mix for sauce):
  • 1/2 tsp salt
  • 1/2 tsp soy sauce
  • 1/2 tsp sugar
  • Dash of pepper
  • 1 to 2 Tbsp water (depending on softness of rice)

Clockwise:thin slices of ginger, garlic, shelled and cleaned shrimps, green onion (scallions) – chopped, Chinese barbecued pork (cha shao), green peas, and center, eggs – lightly beaten

INSTRUCTIONS
1. Add Ingredients A to shrimps and let marinate for 20 minutes.

2. Heat wok on medium heat and add cooking oil. Fry Ingredients B for a few seconds till they impart their aroma, then add shrimps. Stir-fry till shrimps change colour & dish up, leaving oil in wok.

3. Pour in beaten eggs and scramble slightly. Add in rice & Ingredients C - stir-fry for a few seconds. Then add barbecued pork and green peas. Continue frying for several minutes till rice is aromatic.

4. Add green scallions and turn off heat.

5. Mix well. The Fried Rice recipe is ready to serve. Enjoy it !

Ingredients:
  • 6 tablespoons cooking oil
  • 2 eggs
  • 1 teaspoon salt
  • 2 scallions, chopped
  • 1/2 cup fresh shrimp, shelled, deveined and diced
  • 4 cups cold, cooked rice (preferably long-grain white rice)
  • 1/2 cup cooked peas
  • 1/4 cup canned diced bamboo shoots
  • 1/4 cup diced boiled ham
  • 1/2 cup diced cooked chicken
  • 1/2 cup diced Chinese roast pork or left-over roast beef or veal
  • 2 tablespoons soy sauce
INSTRUCTIONS

The secret of making fried rice lies in the use of cold, cooked rice. Freshly cooked rice will only produce a sticky mess.

Heat 2 tablespoons lard or cooking oil. Beat eggs with 1/2 teaspoon salt and scramble in oil until firm, breaking into small pieces. Remove and reserve. Heat remaining oil. Add scallion and shrimp and remaining salt.

Cook until shrimp shows pink. Break up lumps of cold cooked rice. Add to shrimp. Stir until rice is heated and the grains of rice are separated.

Make a hole in the center of the rice. Add all the rest of the ingredients except soy sauce. Stir until thoroughly heated and mixed. Sprinkle soy sauce over rice and mix evenly through. Salt and pepper to taste. Garnish with additional chopped scallions if desired.

  • 1/4 cup diced Red Bell Pepper
  • 1/4 cup sliced Mushrooms
  • 2 tablespoons thawed Frozen Peas

  • 1 tablespoon chopped Cilantro
  • 3 1/2 cups cooked Brown Rice
  • 1/4 cup Low-Salt Chicken Broth
  • 1/4 cup Low-Sodium Soy Sauce
INSTRUCTIONS

In a large nonstick skillet, over medium high heat, heat sesame oil until hot. Add bell pepper, mushrooms, peas, onion, pineapple and cilantro. Saute 5 minutes, stirring occasionally, until onion is translucent.

Stir in rice, chicken broth and soy sauce; reduce heat to medium. Cook 3 to 5 minutes longer, or until all liquid is evaporated, stirring often, The Fried Rice recipe is ready to serve hot...enjoy it !

1 pound Ground Beef
2 cloves Garlic, crushed
1/4 teaspoon Ginger
2 teaspoons Oil
1 Red Bell Repper,cut into 1/2" pieces
1 (6 ounces) package Frozen Snow Peas, defrosted
3 cups cold Cooked Rice
3 tablespoons Soy Sauce
2 teaspoons Sesame Oil
1/4 cup Scallions, sliced

Preparation:


Brown beef, garlic, and ginger over medium heat for eight to ten minutes.

Pour off drippings. Remove beef. In the same skillet, heat oil. Stir fry red pepper and snow peas for three minutes. Add rice, soy sauce, sesame oil, and beef. Heat for five minutes. Add scallions and serve.

2 large eggs

3 cups cooked brown rice, cooled

1 tablespoon thin soy sauce
1/4 teaspoon salt

Directions:

Lightly beat eggs. Heat a 14-inch flat-bottomed wok or skillet over medium-high heat until hot but not smoking. Add 2 teaspoons oil and beaten eggs, and cook 1 to 2 minutes, tilting the pan so that the egg covers the surface as thinly as possible to make a pancake. When the bottom is just beginning to brown and the pancake is just set, transfer to a cutting board. Allow pancake to cool slightly, then cut into 1/4-inch-wide, 2-inch-long strips. Ingredients:

1 cup Uncooked Long Grain Rice
3 tablespoons Oil
2 Eggs
3 tablespoons Soy Sauce
1 cup Frozen Peas and Carrots, thawed

Preparation:


Bring large pot of salted water to a boil. Add rice. Boil 15 - 20 minutes, or until grains are tender. Drain in colander. Rinse with cold tap water until cooled. Refrigerate 20 minutes on baking sheet lined with plastic wrap. Heat oil in wok or large skillet on medium- high heat. Break eggs into oil. Scramble with spatula. Add chilled rice and soy sauce. Stir 2 minutes, or until rice is heated and eggs are cooked. Add peas and carrots. Cook 1 minute to heat vegetables. Serve immediately.
